Skimmer’s Panini Grill is new to San Juan Capistrano, enjoying its second month in business. “So far, everybody that’s come in has brought a friend back with them. We stand by satisfaction,” said manager Mark Jackson. It’s the second location for the company, which started in Mission Viejo five years ago by

culinary enthusiasts Scott and Mary Kim. Skimmer’s, located in the corner of a new San Juan Capistrano business park near Ortega Highway, specializes in making multiple kinds of grilled panini sandwiches, including the Charlie Tuna, Rubennini and El Pollo Ranchero. There’s also gelato for a sweet treat, as well as other lunch items including salads. “We’re taking advantage of having a full kitchen here,” said Jackson. “We just started breakfast, and in the next month or so, we’ll unleash a take-home dinner menu.”
